The other secret to my success

Egg whites. Beaten until stiff. You could use an electric mixer but I prefer a hand mixer. It adds to the drama when done in the presence of guests eagerly waiting for their Belgium Waffles.

I make the batter from scratch as detailed at the bottom of a previous post. Adding the beaten egg whites at the last minute increases the fluffiness that has been building within the crockery as the yeast does its work.

But the whipped egg whites need to be gently 'folded' into the batter without undue commotion. As old Billy said, 

"Nor do not saw the air too much with your hand, thus, but use all gently; for in the very torrent, tempest, and as I may say, the whirlwind of your passion, you must acquire and beget a temperance that may give it smoothness." ~  from Bill Shakespeare's Hamlet ~ which has nothing to do with cooking or beating eggs or even ham for that matter,  though 'hamlet' does sound like a breakfast item.
